If livestock in DMFA did have souls, I would think that cubi or angels would have set up 'soul farms' of mice, they do breed rapidly and I would imagine such a set up would be both profitable and relatively easy to keep in check, plus it provides a way to get obtain souls without angering beings. (unless of course stealing the souls of animals was considered despicable, but I don't really think that's the case.)
The aforementioned setup of course, wouldn't work if mice didn't have a 'soul', or at least a low quality one. I couldn't see a demon setting something like this up, they seem to chaotic to focus themselves like so and would probably abandon the idea as soon as they can go wreak havoc somewhere. I could certainly see an incubus doing such a thing though, I would imagine it would take more discipline than most cubi have. Still, I would imagine at least one would have come up with the idea and some would have the focus required for such a thing if it were truly profitable.

Oh yes, I'd absolutely love to watch a thirty year old+ cartoon about a race. I can't even watch modern live-action races, what makes you think a cartoon race will be any different?
