Judging by the looks of things, Hannah's tail seems to have come off before? otherwise I dont think it'd come off (or fall off) so easily. 

On another note : I wonder how dis-assembling an undead would give soul power to a knight thingy?

The reason we can't tell Fluffly Gender is because she doesn't have one.  Fluffy is Hanna's Tail some how it gained sentience and has taken on a life of it's own

More likely the disassembling is for transportation purposes. After all, they probably just need the head...

...I think if that happened, DP wouldn't want to come back.

Obviously it didn't become fluffy until after this whole storyarc.  Perhaps DP caused a massive surge of magical energy in an attempt to defeat Dan, which had the unforseen side effect of creating sentience in various, random objects in his lair, which included Hanna's tail.
