*Charles hmms*  I tried making maple syrup from silver maples, but the flavor tasted like maple wood (as if one were chewing on a green maple branch) and was rather icky.  However, when it sat for a while, the sugar started to crystallize out and was quite pure-tasting, like regular table sugar, so I boiled it further to reduce the liquid and get more crystalization, so at least the sugar was usable.  Sugar maples are the best for syrup, period.  Silver birch gives spicy sap, and makes an interesting syrup, but we have none of those trees where I live in NJ.

*Charline hmms*  I made syrup out of people who live in Vermont and Canada... it was red and squishy and was good on pancakes!

Ha, ha. Tourists to Maine and Vermont haven't yet figured out that the grading system is reversed . B is more mapley than A. The A syrup looks pretty but it is just sugar water. B looks dark and thick because it actually has maple in it.

Resin from the Maple tree, I think.  You sort of mix it up and smoke it, or so I've heard.

The site says, "By Remy 'Eisu' Mokhtar." Unless there's some big notice that it's being done by someone else, it looks like Eisu's style because it is Eisu. That, or I'm misunderstanding something again.
