I wonder, did you ever watch the original Digimon? You're just the right age to have seen it. It is my current obsession, because I am probably experiencing my first midlife crisis at the tender age of seventeen. I also recommend Gundam Wing, although it does have a somewhat different feel to it.
I, too, am a fan of both Hellsing and Cowboy Bebop, although I only own a small amount of the manga for each.
