I think a major part of the "problem" is that apart from their major role in the story, far greater most other D-101 creatures, for all intents and purposes, we've never actually seen a 'cubi (that is, one who actually knew what they were doing and had full control over their own abilities) be defeated -- by an adventurer or otherwise.  When it does come to a fight, with the exception of Dan's rematch with Dark Pegasus and all its extenuating circumstances, it's rarely even close. (Poor Merlitz.)

Add that to their lengthy and oftentimes scary reputation (THEY'S GONNA EATCHOO UP AND SUCK YOU DRY) and 'cubi can easily come off as untouchable.  Speaking from experience, I can see how that could get to someone.
