This is extremely difficult for me to answer because mostly all of CV's music was tops in my book. So I'll simply state some of my favorite tunes that some of you may be able to relate to:

CV II: Bloody Tears, Mansion Theme
CV III: Beginning, Clockwork, Mad Forest, Stream, Dead Beat, Aquarius, Riddle, Boss Fight
CV IV: 01, 09, 0A, 0D, 0E, 0F, 10, 11

Just about anything from Castlevania IV and Aria of Sorrow.  They both have that weird NES-like music that only the NES and the Super Nintendo could manage to do.  Every console of the 8-bit and 16-bit era had a very distinctive sound chip.

Great topic. Personally, some of my favorite music was from Rondo of Blood, especially the first stage.

Also, Chronicles (Remixed Arranged mode tracks) were friggin' awesome.
