I think the game I would play death in would be IL-2 Sturmovik a combat flight sim. As for what I would fly it would be the Lavochkin La-7 with three 20mm cannons mounted in the nose.

If its the game I'm thinking of, the rules are thus:

You can remove any number of sticks / lines / counters in a horizontal row (or group); the person who removes the last object loses.

I believe there is a winning strategy for the configuration provided.

Coming to that point, I would pick a game where there is a complete winning strategy. Some games are mathematically proved to guarantee a winner if they follow such a strategy. I would choose such a game, if I can remember one right now. (I think Connect 4 has a winning strategy, but I have no idea what it might be without looking it up.)

And yes, all full-information combinatory games have a winning strategy for one of the players (or, in some cases, a strategy to end the game in a draw). Even chess has one, but no one has found out what that strategy is.

I might be hit for reviving this...

I didn't realize how funny that was for a moment. Anyway, I would challenge death to an eating contest with the qualifier that the winner also has to use the toilet first after finishing their food. A skeleton can't digest food so I should win this one, and if Death is a perky Goth chick as in the Sandman series I can expect her to likely not finish eating cause she's girly (girly meaning the stereotypes and not meaning that all girls that are feminine aren't voracious eaters) and won't eat it all.
